Chicken and Spanish Rice

Ingredients
- 1 cup onion, chopped
- 1/4 cup green pepper, chopped
- 2 teaspoons vegetable oil
- 1 8-ounce can tomato sauce, low sodium
- 1 teaspoon parsley, chopped
- 1/2 teaspoon black pepper
- 1 1/4 teaspoons garlic, minced
- 5 cups rice, brown, cooked
- 3 1/2 cups chicken breast, boneless and skinless, cooked, diced
Directions
- In a large skillet, sauté onions and green peppers in oil for 5 minutes over medium heat.
- Add tomato sauce and spices. Cook until heated through, 3-5 minutes.
- Add cooked rice and chicken. Cook until heated through, about 3-5 more minutes. Serve warm.
