Black Bean Sliders

Ingredients
- 2 15-ounce cans black beans, low sodium drained and rinsed
- 2 carrots, diced
- 1/2 cup onion, diced
- 1/2 cup bread crumbs, plain
- 1 egg, slightly beaten
- 2 teaspoons chili powder
- 1/2 teaspoon black pepper
- 14 slider hamburger buns, slider sized
Directions
- Place 1 1/2 cups black beans in a large bowl and mash well using a fork or potato masher.
- Add the remaining black beans and other ingredients except buns to bowl and combine well.
- Scoop 1/4 cup of mixture and form into a patty. Repeat until no more mixture remains.
- Spray a large skillet with cooking spray and heat over medium heat. Cook patties, about 2-3 minutes each side, until browned.
- Remove from heat, serve on bun, and enjoy.
Recipe Tips
Add 1 cup of quinoa or brown rice in place of bread crumbs for added bulk and fiber.
Use red onion for added flavor. You can also add 1/2 teaspoon ground cumin and 1/2 teaspoon ground cinnamon for a different spice blend.
Serve with salad, steamed vegetables, or fresh vegetable salad (like tomato cucumber salad).
