Instructions
  1. In a small bowl, combine minced garlic, salt, lemon juice, olive oil, cumin, cinnamon, and cayenne. Set aside.
  2. Bring a large pot of water to a boil. Add chopped carrots and cook until just tender, about 5-10 minutes.
  3. Drain carrots and rinse immediately under cold water.
  4. Add the dressing to the carrots and mix well.
  5. Toss in raisins, slivered almonds, and parsley.
  6. Serve salad at room temperature or chilled.
